1 cup Cholam / Jowar / Sorghum
1/2 cup Urad dal / Ulundu Paruppu
1/2 tablespoon of Fenugreek Seeds / Vendhayam
Salt to taste
Oil for greasing
Hand full of Flattened rice/poha/avalakki(Optional)
Wash Jowar well and add water and soak it for 8 hours and Urad dal,Fenugreek Seeds,Flattened rice soak separately for 6 hours.Make fine paste of both Jowar and Urad dal separately with the help of grinder.In a bowl mix the both Batters and add salt soak it for overnight for fermentation (You can add salt before making idlis also).
Grease idli mould with oil. Pour idli batter in the holes. Place in a steamer, and cook for 15-20 minutes. Remove from heat. Leave to cool down slightly. Open steamer, and remove idli from the moulds. Repeat with the rest of the batter.Serve with coconut almond chutney,Peanut chutney or sambar.I prefer for onion and tomato chutney.
Using rice cooker:
Grease idli mould with oil. Pour idli batter in the holes.Pour some water(approximately 2 cups) in rice cooker squeeze 2 to 3 drops of lime juice.Place the idli moulds in rice cooker,Cook for 20 minutes and remove outside,serve hot with chutney.
Apply oil on the microwave idli container and pour idli batter into the moulds.Set the microwave for 3 minutes on medium power.When the idlis are prepared, with a help of a knife/Spoon,remove them from the microwave idli container and transfer in a serving bowl,serve hot with chutney.
- You can use either Cholam / Jowar / Sorghum flour or whole Jowars as it is.
- If you use jowar flour mix it with urad dal batter,add salt and ferment it for overnight.
- If you want to make instant Cholam / Jowar / Sorghum idlis add sour curd with urad dal batter,Jowar flour mix well and make idlis.
- You can use jonna rava also,Mix the cholam rava with urad dal batter,add salt and ferment it for overnight.
- You can make Dosa with the same batter on dosa tawa.
