This is an instant recipe,everyone can make easily.ragi flour gives lot of calcium,good carbs, amino acids and Vitamin D.Ragi is best food for weight control, diabetes and a cooling the body.Ragi is a whole grain that is gluten-free and a staple in South India.

2 cups of Fermented idli batter(Read this)
11/2 cup Ragi Flour /Nachni flour
Salt to taste
Water as needed
1/2 Tablespoon Baking Soda / Cooking Soda(Optional)
Oil for Greasing Idli Moulds
Warmup the water keep aside.In a bowl add Ragi Flour and add warm water stir carefully because flour become lums.mix well and add idli batter,mixup well both batters.add salt and stir well until combined both batters.Keep aside for 15-20 minutes.
Grease idli mould with oil. Pour idli batter in the holes. Place in a steamer, and cook for 15-20 minutes. Remove from heat. Leave to cool down slightly. Open steamer, and remove idli from the moulds. Repeat with the rest of the batter.
- Instead of water you can use sour curd also.Stir the curd well and add directly in flour, add water if needed and make batter in idli batter consistency.
- Batter consistency ,The batter should not be runny or too thick. Think more like a free flowing pancake batter.
- To make sure that the idli is cooked, insert a toothpick in the idlis. If the batter comes out clean, then the idli has been properly cooked.
- You can use Ragi flour also,Mix the ragi flour with urad dal batter,add salt and ferment it for overnight.
- you can use whole ragi also,Soak separately whole ragi and grind separately and add with urad dal batter,add salt and ferment it for overnight.
