Stuffed Egg Idli/ Egg Kothu Idli/Muttai Idli
Stuffed Egg Idli /Egg Kothu Idli/Muttai Idli whatever you call Names may vary but recipe is Idli is same,stuffed by egg spicy masala.Everyone likes this super delicious soft Stuffed Egg Idlis.you can send kids lunch box also.
How to Make Muttai Idli Batter:

For the stuffing:
3 Eggs ( beaten /boiled and sliced eggs)
1 big Onion ( finely chopped )
1 big Tomato ( chopped)
1tbsp Ginger ( chopped)
1tbsp Garlic ( chopped )
2 Green Chili ( sliced )
1/2 tsp Red Chili Powder
1/4 tsp Turmeric Powder
1 tsp Mustard
Salt to tasteheal
Heat oil in a pan , pop mustard and add curry leaves.
Add in ginger, garlic ,green chili and onion, saute until translucent.
Add red chili powder, turmeric and saute, add in tomatoes salt and cook until mushy.
Move the masala to the side of the kadai and add in the beaten eggs, salt and scramble it.
Mix everything well to get a scrambled egg masala.
Grease idli mould with oil. Then add 1 tbsp of egg stuffing/potato stuffing on top of it. Now add a tablespoon of batter again on top. Make sure that everything is totally covered.Pour idli batter in the holes. Place in a steamer, and cook for 15-20 minutes. Remove from heat. Leave to cool down slightly. Open steamer, and remove idli from the moulds. Repeat with the rest of the batter.
Using rice cooker:
Grease idli mould with oil.Then add 1 tbsp of egg stuffing on top of it. Now add a tablespoon of batter again on top. Make sure that everything is totally covered. Pour idli batter in the holes.Pour some water(approximately 2 cups) in rice cooker squeeze 2 to 3 drops of lime juice.Place the idli moulds in rice cooker,Cook for 20 minutes and remove outside,serve hot with chutney.
Apply oil on the microwave idli container and Then add 1 tbsp of egg stuffing on top of it. Now add a tablespoon of batter again on top. Make sure that everything is totally covered.pour idli batter into the moulds.Set the microwave for 3 minutes on medium power.When the idlis are prepared, with a help of a knife/Spoon,remove them from the microwave idli container and transfer in a serving bowl,serve hot with chutney.
- Sprinkle garam masala or red chilli powder and salt,dhaniya powder on idlis while serving.
- You can also make egg stuffing with chopped boiled eggs.
- The instant stuffed idli batter consistency is very important. it should not be too thick nor too runny.
- Be careful while stuffing the idli’s. stuffing should be thick and small sized so that it doesn’t come out of idlis.
